Famous Ted's Steamed Cheeseburgers

Our friends Shelia and Jon were here for a visit for a few days and we visited various places of interest in Connecticut, including the Mystic Seaport, Indian Museum at Foxwoods, a few wineries and no visit to Connecticut would be complete without a visit to Ted's in Meriden for his famous steamed cheeseburgers. I did another blog entry on steamed cheeseburgers but nothing seems to beat Ted's.
One of the pictures shows the steam cabinets where the cheese is melted and the hamburg is cooked. They told us they do about 250+ cheeseburgers/hamburgers a day.
Not a fancy place but mighty good burgers. We went twice during Shelia and Jon's visit.

I don't reckon I've ever come across a steamed burger before... sure looks good -- but how do they put a cover (seared surface) so it don't come up gray?
